บทคัดย่อ: The purpose of this work was to study cadmium and lead concentrations in squids as raw material and after canning. Thirty-eight samples of raw squids were analyzed for lead and cadmium concentrations. The same samples were canned in 38 tins and after sterilization analyzed again for lead and cadmium. In raw squids the mean concentration of lead and cadmium was 0.55 ± 0.03 μg/g and 0.56 ± 0.10 μg/g wet weight, respectively. In laboratory canned squids the mean concentration of lead and cadmium was 0.60 ± 0.02 μg/g and 1.04 ± 0.18 μg/g. A higher concentration of cadmium in canned squids was observed. The mean increase of the cadmium concentration from raw material to canned squids was 85.71%. The lead concentrations did not show any significant difference in raw and canned squids. In addition, 68 samples of commercial canned squids in natural juice were examined. The mean concentration of lead and cadmium was 0.3 ± 0.02 μg/g and 1.11 ± 0.08 μg/g, respectively. © M. & H.
